Ultimately I would like to create seperate forms for one-time and monthly donations and only have one of the options on each form so people don't get confused.

Serait-il possible de partager un lien sur notre formulaire qui renvoie directement sur l'option "Don mensuel", avec une ancre par exemple? Par défaut, le lien du formulaire de don est sur l'onglet "Don ponctuel", mais il serait intéressant dans certaines de nos communications qu'il redirige sur "Mensuel" ou "Annuel". Merci!

I wish we could choose the default frequency for donations so that I can make monthly the default when I want to.

Monthly donations should either be the Zeffy default, or settable by the account owner as a default. You have already recognized that monthly is better than one-time, so let's be consistent with that knowledge.
